I wanted to see a provider who starts at 12 PM who offers only hourly appointments for an agency. The booker told me the first appointment available is 1:15. Does this mean that they have only 15 min between clients, and should I cancel due to hygiene reasons ? Also, can I directly ask the booker if she is seeing someone from 12-1, and generally speaking how much time they have between clients ?

It is generally 15 mins with an agency. But the girl is not redoing make-up or hair. Usually jumps in the shower with hair put up to avoiding getting wet, drys off, gets dressed and a quick change of the sheets while making up the bed.
However this is usually why you have to wait an extra 5 mins or so when you arrive for your appointment.
It doesn’t take that long, but can go 20-25 mins sometimes.
While touring I would take half hour or hour because I was booking my own schedule. Most indies put more time between but for agencies, they are maximizing as much as they can.
However. She could have had at 45 mins booked and therefore it was a 30 min gap. You don’t know. And no - you have no right to ask about other appointments just like no one has the right to ask about yours.
If you have a real problem with this, maybe this is not for you.
Related question. Do guys typically try to run out the whole clock? I book an hour so I don't have to be in a big rush, but if I'm done and happy I tend to be pretty efficient about getting out the door. Some of my sessions run up against the clock, but I often leave (happily) with a fair amount of time left on the clock. I like to hang around and chat for a bit, but I feel no big need to get 59.5 minutes out of a 60 minute session.
I'm just curious about what's more typical.
You should cancel only because it'll be in your head during the whole time you're there.
I wouldn’t know honestly as for me, if there is still time, I fill it. Either with a massage, or cuddles or chit chat. I have guys try to leave and I’m usually good at making them want to stay even if they can’t go a second round. I would say that most guys are out the door at least 5 mins before time ends though.

I don't think there is anything wrong with asking about the agencies hygiene practices, including how much time is left in between appointments. But I wouldn't ask them directly if she is "seeing someone from 12-1". If the agency dances around the issue or gives an off response, you are free to book with another agency who's practices make you feel more comfortable. The woman also play a role in maintaining the reputation of the agency. I've been in situations where the agency said that the ladies always shower in between appointments, change the sheets, etc., only to meet the girl and her hygiene was clearly off (as in there is no way she properly cleaned herself beforehand). I never repeat booking with ladies when this happens and often will never book with the same agency again (unless, after bringing up the issue, they provide a fair solution). There's never really a good reason why any of the ladies or agencies should sacrifice hygiene so they can get another client in 5-10 minutes earlier.....

I've probably done that a few times... It's typically a case where I cum really hard about 35 minutes in, and I know I'm well and truly done. For me, I guess the point of an hour session in to not come up against the time barrier (I still do occasionally), but if I fall short, and I'm happy, it's all good.

- If you want to dictate an escort's schedule then pay for the time.
You really do just have to be at peace with the fact than an escort is likely to see any number of dicks in a day... Yes, you have the right to expect her to be hygienic, but if you can't handle that she will typically have multiple clients then you need to adjust to safer services (like CBJ, no ass play, and no LFK/DFK), or to not see escorts.
